The mullet would flow in during the right conditions - usually for only about 20 minutes and then they would disappear as suddenly as they arrived. They were supposedly hard to catch because of their soft lips and their suspicious habit of spitting food out to test it before considering biting. But if you had the knack you knew when to strike. The Chinese restaurant would pay you well for a mullet. 5p and a bag of chips to eat on the way home. The bones are large and so the flesh falls off in large pieces.
