Yes, I'm well aware or the term ground beef being the current term but not too long ago hamburger was a popular term for minced beef, ''for a meatloaf'' take 1 1/2 pounds of 'hamburger!!! Verbal and written in my case.

Maybe a regional term or social grouping  name? Just as 'Beef Burger' is now the English term!!! for a hamburger, no it doesn't have any pork or ham in it, unless  you're in Spain or Asia!!!

Also 'chopped sirloin' with mushroom gravy !!! Figure that? Probably relates back to the German versions as related to above???

In the Clarendon Grill the fillet steak was finely sliced and diced , seasoned, some  beaten egg added, on a prep trolley at the table, a la Tartare, formed into a bowl shape, a piece of smoked cheese inserted and then formed into a"patty"  taken to the grill and cooked to the diners choice,  A Vienna Steak  Yum😋
